Kale

Kale (Brassica oleracea) is an amazing vegetable recognized for its nutrient richness and medicinal benefit.  This super vegetable is high in beta-carotene, vitamin C, and the important eye antioxidants, lutein and zeaxanthin. Kale is also rich in sulfur containing phytonutrients as well as calcium.

Kale, like cruciferous vegetable and other members of the Brassica family contain sulforaphane, a phytochemical with strong anti-cancer activity.  Sulforaphane is believed to block the growth of cancer cells or repress their formation. Kale is also a good source of indole-3-carbinol, a phytochemical that aids in DNA repair, another potential anti-cancer effect.

The fiber content of all the cruciferous vegetables including kale is thought to bind bile acids and lower cholesterol levels
